From juicy tomatoes and crisp cucumbers to nutrient-packed broccoli and tender okra, our farm is bursting with the season's best. But what if you could enjoy the taste of summer all year long? With the right preservation techniques, you can!


Preserving your summer harvest not only helps you make the most of your fresh produce but also ensures that you have nutritious, farm-fresh food available even during the colder months. In this blog, we’ll explore two popular methods for preserving produce: canning and freezing. Both are effective ways to capture the flavor and nutrition of your favorite vegetables so you can enjoy them long after the harvest season has ended.


Canning: Sealing in Freshness


Canning is a time-tested method that involves sealing fruits and vegetables in airtight jars to prevent spoilage. This process allows you to store produce for up to a year or more, depending on the type of food and how well it's canned.


Getting Started with Canning:


1. Choose the Right Produce:

- Select high-quality, fresh vegetables at their peak ripeness. Tomatoes, cucumbers, and okra are excellent choices for canning, as they retain their flavor and texture well.


2. Gather Your Supplies:

- You’ll need canning jars, lids, a large pot or canner, jar lifters, and a funnel. Make sure all your equipment is clean and in good condition.


3. Prep Your Produce:

- Wash and peel (if necessary) your vegetables. You may want to slice or chop some produce, like cucumbers, before canning.


4. Sterilize the Jars:

- Place your jars in boiling water for 10 minutes to sterilize them. This step is crucial to prevent bacteria from spoiling your canned goods.


5. Fill the Jars:

- Pack your prepared vegetables into the jars, leaving some space at the top. Add boiling water, pickling brine, or tomato juice, depending on what you're canning.


6. Seal and Process:

- Place the lids on the jars and process them in a boiling water bath for the recommended time. This step ensures that the jars are sealed properly and the contents are preserved safely.


7. Store:

- Once cooled, store your canned goods in a cool, dark place. Properly sealed jars will keep for up to a year, allowing you to enjoy your favorite summer vegetables throughout the winter.


Freezing: Quick and Easy Preservation


Freezing is another great way to preserve your harvest, and it’s handy for vegetables like broccoli, okra, and collard greens. Freezing retains more of the produce's natural flavor, color, and nutrients than other preservation methods.


Steps to Freezing Produce:


1. Blanch Your Vegetables:

- Blanching is a quick process that involves boiling vegetables for a short time before plunging them into ice water. This step stops enzyme actions that can cause loss of flavor, color, and texture. For example, broccoli should be blanched for 3 minutes, while okra can be blanched for 3-4 minutes.


2. Cool and Drain:

- After blanching, immediately transfer the vegetables to an ice bath to stop the cooking process. Once cooled, drain the vegetables thoroughly to remove excess water.


3. Package for Freezing:

- Pack the blanched vegetables into freezer-safe bags or containers. Be sure to remove as much air as possible before sealing to prevent freezer burn.


4. Label and Store:

- Label each bag or container with the date and contents. Store your frozen produce in the freezer, where it can last up to 12 months.


5. Thawing and Using:

- When you’re ready to use your frozen vegetables, simply thaw them in the refrigerator or cook them directly from frozen. They’re perfect for soups, stews, stir-fries, and more.
